What a wonderfully sunny autumn weekend! Currently we are very lucky with the weather, here in the Rhineland. The sun is shining, the discolored leaves are yellow and orange. During the day it was still pleasant. Yesterday we had even 26 degrees outside - perfect barbecue weather so! And yet, it inevitably turned autumn. Local fruits and vegetables at your doorstep
Since I moved out of town a bit, I live in a wonderful region teeming with farms. In the neighboring village there are various orchards - due to the good location at the nature park Rheinland and in the foothills of the foothills. The region is known for strawberries and asparagus, especially in the spring, but there are also plenty of apples, pears and pumpkins here. And pray! Finally I get my beloved Ringelbete directly from the region. Within a radius of about 10 km, I find almost a dozen farm shops selling their own crops, some of them also organic certified. What is not grown itself, is purchased from other regional producers, so I also get meat and dairy products in the best quality and from the region. It is an absolute joy! The cake, the I have chosen for today, is an apple galette. I love Galette! The cake is incredibly simple and comes with few ingredients. This could quickly be boring, because it is not a multi-storey cream cake, but far from it. The individual ingredients combine so terrific together, my apple galette is a revelation! For the soil, a simple, not too sweet shortcrust pastry is kneaded and simply rolled out as a rustic rectangle. The floor does not have to be perfect, it should not be worked with too much flour. If he breaks, that is not bad in this case! The result is a deliciously crunchy, leafy tarte bottom. For the filling I use local apples, in this case Elstar and Jonagold. Braeburn or Rubinette would also be varieties that would be great. The apples are simply cut into thin slices and spread out in a fan shape on the ground. And now comes the peculiarity: from maple syrup and butter (and some sea salt) I prepare a delicious caramel, with which I einpinsle the apples. They then cook in this mixture, remain wonderfully juicy and caramelize.

Fan the apples overlapping and spread on the dough. Allow around 5 cm of space all the way to the edge. Brush the apple slices with the caramelized maple syrup butter mixture. Then gently fold the dough edges inwards. Stir the egg with 1 teaspoon of water, brush the edge of the galette and sprinkle with brown sugar. Carefully pull the baking paper onto a baking tray. Bake the apple galette in a preheated oven for 45-50 minutes until golden brown. Allow to cool slightly on the plate.
