I both love it a lot and already have some recipes with rhubarb on the blog, such as almond cake with rhubarb and strawberry compote, rhubarb meringue pie, rhubarb cream cheese ice cream with sprinkles or rhubarb ketchup. Although rhubarb is a vegetable, it is usually used in sweet combinations. So it was time for a hearty idea. That's why I've brought you a tasty rhubarb tart with goat cheese and almonds .

But I have kept to my tried and tested standard recipe for tarte flambée, as I have also published here: Tarte Flambée with white asparagus. I also combine the rhubarb with mild goat cream cheese, blanched almonds, spicy shallots, honey and rosemary. A delicious and spring-fresh combination!

Seasonal tastes better: Rhubarb tarte flambée with goat cream cheese and almonds

Rhubarb tart with goat cream cheese and almonds



  • 225 g of flour Type 405
  • 100 ml of lukewarm water
  • 1 Yolk
  • 2 tbsp olive oil
  • 2 pinches of salt
  • something Flour for the worktop
  • 150 g crème fraîche
  • 150 g goat cream cheese
  • 1 pinch of sea salt flakes
  • freshly ground black pepper
  • 1 large shallot
  • 4 thin sticks of rhubarb
  • 50 g of blanched almonds
  • a few sprigs of rosemary > span
  • some honey for dribbling
  • a small handful of arugula



Quickly knead all ingredients for the dough. He should get an elastic consistency. Cover or wrap in foil and let rest at room temperature for 30 minutes.


Preheat the oven to 200 ° C top and bottom heat. Divide the dough into two parts and roll out as thin as possible on the lightly floured work surface. Place the first piece of dough on a baking paper and put it on a baking tray.Brush both tarte flambée to the brim with the cream. Peel the shallot and cut into thin rings. Sprinkle evenly on the two tarte flambée. Clean the rhubarb well, cut off the ends and cut into the bars diagonally into pieces about 3 cm wide. Distribute evenly on the two tarte flambée.


The first one Bake the tarte on the middle tray for 18-20 minutes until golden brown and crispy. After half of the baking time, spread half of the blanched almonds on the tarte flambée and drizzle with about 1-2 teaspoons of honey each time. Cover with a few sprigs of rosemary and bake.
